1. What is the difference in printing between

I do not know if there are differences. But more and more german
printers are already using or at least planning to use the
international ISO 12647-2 as their printing standard. Frankly, I do not
know what the situation in the netherlands is.
2. I'm enthousiastic about the provided
profiles, but hesitate to
use them because I'm not sure what differences there are. Are the
measurements made throughout Europe? Or just in Germany?
The measurements were made in Germany, but where is the difference? I
just assume that you are probably referring to the actual prints: they
were made by ONE printing company. The approach which was chosen was
not to find an average printing condition which measures as many prints
as possible from as many sources as possible and find the least common
denominator, but to "hit" the values in the ISO standard. The prints
(which reached this goal really well!), were then measured by about 7
or 8 different parties (just to make sure everybody measures similar
values) with similar hardware (spectrolino).
These measurements (of the same printing samples) were the starting
point for the characterization data you can download and which is also
the base for the Profiles.
So, everybody who is capable of printing according to the ISO 12647-2
will be able to produce good results that will match closely to proofs
manufactured according to this standard (assuming that the proofing
system used the characterization data!).
And this is not a local thing, but should work everywhere all over the
world.
Of course, the ISO 12647-2 might not have the support in the US (SWOP)
or Japan (Toyo), but still, it's the only ISO standard for Offset
printing available.
3. What is the difference in profiles provided by
Photoshop
(eurostandard coated, uncoate and newsprint) and yours?
To my knowledge - and somebody should please correct me if I'm wrong:
The profiles in Photoshop do not use the same colors for the primaries
(CMYK), they (as far as I know) use primaries specified by an older
standard (the old Euroscale).
