formal answer first:
- PSO Coated v3 (FOGRA51 respectively) represent printing according to the revised ISO12647-2:2013 offset standard. I.o.w. are the successors of FOGRA39 and ISO Coated v2
- FOGRA39 and the two ECI profiles ISO Coated v2 and v2 300% represent offset printing according to the previous version of the standard (published 2003 and 2007).

all three refer to printing on coated stock. In ISO vocabulary coated stock is “premium coated” now (was matte- or glossy coated in the previous standard)

practical answer:
Which one to take depends on the press setup at the printing house: The press minders need to take into account some details like new measurement condition M1 instead of M0, must calibrate to changed tvi curves, etc.

ECI and Fogra recommend to switch to the new profile and characterisation data.
