Reducing Yellow in dark areas is for following reason: printed in the last printing unit, yellow behaves like a mirror on top of the previously printed inks and therefore lightens up the color. In order to reduce that effect, the percentage of yellow is reduced in the colour separations. You may wish to check out the respective colour values in the Fogra characterization data - FOGRA39 in this case.

Why do you reduce the amount of yellow ink in deep shadows in your
profiles? Does that allow you to use more of the other, darker inks
while staying within the total ink limit? How do you know how much
yellow to remove without making the shadows too blue?
